Dear colleagues,

On behalf of the Organizing Committee and all the dedicated people working together to make the 58th International Congress of Meat Science and Technology come to life, we, your Président d’honneur, Dr. Steve Morgan Jones of Agriculture and Agri-Food Canada, your Co-Chairs, Dr. Linda Saucier of Université Laval and Dr. Frances Nattress of Agriculture and Agri-Food Canada, are very proud to invite you to join us in Montréal from August 12th to 17th 2012.

The Healthy World of Meat is the congress’ theme and specialists from around the world have been invited to share the latest developments on topics that range from innovative production practices and  environmental stewardship  to processing for healthier meat and meat products to meet the requirements of consumers.  The program that has been developed includes topics that are timely, have an international flavour and appeal to anyone who, just like you, have an interest in meat science. It will be a tremendous opportunity to share, exchange ideas, and spur new collaborations and initiatives.

We are especially pleased to welcome you for the third time in Canada! Indeed, it has been more than 20 years since Canada has been host to ICoMST. The Canadian Meat Science Association and the Canadian Meat Council who represent both the scientific community and the Canadian meat industry, are working together to make the 58th ICoMST one to remember.  Key players from the Canadian meat industry, the academic community and the government players are partnering once more, this time to bring ICoMST 2012 to you and to the world.

The congress will be held at the Hilton Montréal Bonaventure Hotel in the heart of Montréal, Canada.  Montréal, in “la belle province de Québec”, is brimming with history, festivals and multiculturalism and, from August 12th to 17th 2012, will be home to ICoMST.  The city has its own “joie de vivre” that will make your visit a memorable one.

We warmly invite you to attend ICoMST and take advantage of all planned activities. You will expand your scientific and technological horizons, enjoy the beautiful city of Montréal and its surrounding area, and why not plan to visit Canada a little longer?
